Roast Banana with Toasted Almonds, Mascarpone and Honey

This was an extremely simple pudding on Sunday evening to accompany watching the X-factor. 

This was for three


3 bananas

3 tablespoons mascarpone

runny honey

handful almonds

tin foil

How I made it:

Wrap bananas in their skin in foil and put in oven pre-heated to 180 degrees celsius (relatively hot), leave there for 30 mins.

Put a dry pan on the heat and toast the almonds for a few minutes, taking care they don’t burn.

Crush almonds with the flat of a knife, or chop if you don’t have a big knife.

Take bananas out of skin, put in a bowl. Spoon on mascarpone, drizzle honey and sprinkle almonds.
