I made this salad to cut through roast chicken thighs, and sweet potato chips with yogurt, tarragon and lemon dip when a certain Ms. DJ came over for dinner.
This served 2-3
Ingredients:
1 fennel bulb, very finely sliced
5-8 radishes, very finely sliced
1 pink/red grapefruit, using the segments cut from the pith
handful of rocket cut up a bit (optional)
2 spring onion tops, finely sliced
1 red chilli, finely sliced
squeeze of lemon
1 dessert spoon red/white wine vinegar
1 tablespoon extra virgin rapeseed oil
salt
How I made it:
Toss all of the ingredients together well in a bowl, and make sure it is well seasoned with salt.
Eaten with:
Roast chicken thighs, and sweet potato chips with tarragon yogurt dip.
