I eat this all the time, and it’s ridiculously simple – but I love it.
cucumber – large or small – peeled and sliced quite thinly
pinch of white sugar
good pinch of salt
grind of pepper
drizzle olive oil
1 dessertspoon red wine/white wine vinegar
Toss finely sliced cucumber well with the other ingredients. Arrange on a nice, flat plate and eat as a refresher to any rich, comforting dish.
