For spring greens of your dreams, wash mud off the greens and cut off the tough, thick stems. Slice greens into 2-3 inch slices. Bring some water to the boil in a saucepan that can fit the greens, with a good pinch of salt in. Boil the greens for 3 minutes, or until just tender. Drain well.
Place on a warm serving dish. Drizzle over 2-3 tablespoons of extra virgin olive oil and a sprinkle over a good pinch of salt. Mix gently. Grate over some parmesan, or grana padano, top with a little extra oil.

If you can’t be bothered to make much else, eat with several rounds of buttered toast and maybe a poached egg.
