Steamed Romanesco Cauliflower with Mint Dressing

This was for two

Ingredients:

½ Romanesco Broccoli cut again in half

Dressing:

4 tablespoons olive oil

juice ½ lemon

1 tablespoon red wine vinegar

bunch of finely chopped mint

teaspoon sugar

salt

How I made it:

Mix all the dressing ingredients together. Check for seasoning and acidity and adjust accordingly. Bring salted water to the boil, add in the Romanesco. Boil for one minute. Drain and return the Broccoli to the pan with the lid on. Put in a pre-heated to 150 celsius oven for 5-10 minutes until cooked – check with a knife. Rinse it under cold water to stop cooking. Drain. Lay onto a plate and pour dressing over.

The addition of capers to the dressing would also be nice, I think.
