The words of Claudia Roden on the BBC Radio 4 Food Programme describing the need to pay attention to an ingredient each time it is used, considering the possibility that every one may be different. She encourages cooks to engage the mind and the senses, not forgetting to think while caught up in the abstraction of a recipe book.
If one follows a recipe and forgets to observe, to tend to and to season those tomatoes – for example– , then they will know they are forgotten, and will also forget to taste good.
